Is there a food that just makes you happy? Something that, when you eat it, goes beyond taste and satisfaction? Maybe it’s tied to joyful memories, a loved one, or a geographical location that you enjoyed.
I have a few of those kinds of foods – one of which is huckleberry pancakes.
Unless you have lived in or traveled to mountainous regions of western United States or Canada, you likely haven’t heard of huckleberries. You’ll just have to take my word for it that they are delicious. Similar to blueberries, but far more flavorful in my opinion.
I grew up picking these wild berries in the mountains of Idaho. Near the end of every summer, when the berries ripen, my dad and I would head out in his old Ford pickup truck, up winding dirt roads looking for patches of the shrubs. We’d sit down on the side of the mountain and fill our buckets. (Well, I often left with my belly much fuller than my bucket…)
You can do lots of things with the berries, but one of my favorites was when mom would put them in the pancake batter. The sweet-yet-tart flavor of the huckleberries just go so well with pancakes and syrup. I love everything about them, though probably my memories with dad the most.
Alas, I don’t get them often any more, as you can’t find huckleberries in Los Angeles. But lucky for me last summer was a particularly good year for wild huckleberries, and my father froze much of what he picked. I got to bring some back to LA with me after my Idaho visit, so I get to enjoy the treats of my youth!
The thing is, my digestion has been giving me a few problems lately, so I went back to going gluten free for a while to see if that helps or not. But do you think I’m going to let that stop me from enjoying my huckleberry pancakes? Heck no! Not when I’ve got several bags of the goodies in my freezer!
Luckily I have found what I think is the best pancake mix I’ve ever tried, gluten or no gluten. It’s a great mix for muffins too (and yes, I’ve made huckleberries muffins recently) and it’s becoming easier to find.
So, in case you too are trying to go gluten free to see if it helps your digestion or your skin, I want to share it with you. Heck, even if you aren’t going gluten free, you should try this stuff. It’s great!
It’s the Pamela’s brand (there are other Pamela flour blends as well, not just pancake mix). You can find it online, and Whole Foods stores that I know of. Likely other stores as well.
Other than telling you about my new favorite pancake mix, I want to remind you that it’s just as important to enjoy your food, as it is to eat nutritiously. I believe in making healthy choices, with a healthy mindset. Unless faced with a true allergy, I don’t believe in “never” in nutrition. Or “always” for that matter. There are no rules, only guidelines. You don’t have to deprive yourself of your happy foods. You shouldn’t. Happiness heals too
